Los Nogales is a family-owned mill that processes coffee for 9 farms throughout El Salvador. They use demucilage equipment and by controlling water flow can offer 3 types of processing. With very little water flow they create what they call a "washed" coffee, but is truly a pulped-natural in the Brazil style. A lot of mucilage (the fruit under the skin of the coffee cherry) is left on the parchment, and the coffee is taken directly to raised drying beds. The Extra Washed and Ultra Washed cup more like traditional wet-processed coffees, and these are processed in the same way except with increased quantity of water in the demucilager, and with an additional 6 hour water bath afterwards. Then the coffee is layed out on traditional clay tile patios to sun dry.
