The drying patios at Los Nogales are the best I saw in all of El Salvador. The importance of patio maintenance is clear, if water pools up, or is trapped in unsealed cracks, it will soak some of the coffee and result in cup problems. If coffee is stuck in cracks between batches, being held over, it will create defects in the cup. So every crack needs to be seamed, and the patio must be even or slightly sloped to drain correctly. These are the little things that take a lot of man-hours and when coffee prices are low, these are the maintenance tasks that are the first to go unattended. The result in the cup is a direct result.
