Cocoa Roasting

Like many people, I've long thought of cocoa and coffee as being fairly similar; both are complex flavor-wise, both are grown in the tropics (one at low elevation, the other high) and both are seeds that need roasting before consumption.  But  I didn't know much about chocolate production until I met Robbie Stout of Ritual Chocolate in Denver, CO who gave me a tour of his facility and explained a bit about the cocoa roasting process and making chocolate.

Cupping Green Coffee

Many folks talk about, or complain about, a coffee having too much roast flavor, as opposed to origin flavor. In this video, Tom does an experiment to try all the stages of roast, from completely green unroasted coffee to yellow stage, to just before first crack and then into the more traditionally recognized roast levels. Oddly enough, the roast just before first crack tastes a lot like a commercial coffee - ala Dunkin' Donuts style coffee.

Hyenas of Harar #2

The pack in Harar has been fed for 50 years by the Hyena Man (2generations of Hyena Men, to be correct). They also come into town through “Hyena Hole”, a gap in the wall surrounding the Jogol, the old town. While they are dangerous and wild, they are pack animals, and highly adaptable. So the feeding of them seems partcularily tame. But there are hyena attacks on children, as you will see when I photographed a 10 year old victim who survived (my full pictorial coming soon.) They will take young children and simply disappear to the mountains.
