While the job of hand-sorting looks like a bit of a drag, it is probably one of the most skilled job in coffee. These jobs are highly sought-after because they tend to pay well for the rural economy in which they are situated, and are a job done almost exclusively by women. You will see young women who have finished school and not yet married, and older women who have raised their families at the hand-sorting tables.
